This Sauvignon Blanc is crafted from some of the oldest vines of the Wairau Valley of Marlborough. The region is renowned for its tropical and ripe fruit expression, with a minerality that is shaped by shallow, stony and fast-draining river terraces. And Grove Mill winery, the estate behind Goldwater Wines, know how to nurture this terroir. A pioneer of sustainability in New Zealand, they use solar power alongside minimal intervention techniques, with a wetlands reserve for the preservation of local flora and fauna. They even use sheep to graze the vineyards in winter. Using high-quality blocks, the grapes are selectively harvested and then gently crushed and pressed before being settled into the tank. A small percentage is run to barrel for wild fermentation, with the rest racked to stainless steel tanks inoculated with selected yeast strains to promote aromas specific to Sauvignon Blanc.
