Brindisa - Monika Linton Monika Linton is the founder of Brindisa, the company that has been instrumental in the import of Spanish ingredients to the UK and which has subsequently pushed the emergence of awareness of authentic Spanish food in much the same way that Rose and Ruthie did with The River Café. The story of how Brindisa came to be does however throw up the interesting anomaly that they started by exporting UK produce to Spain in the emergence of a free trade market in Spain at the end of Franco's rule.
