It's flesh is a source of top quality protein for many. One of the major loss of fish and fish product is spoilage. Fish can be preserved in various ways (smoking, freezing, drying, canning, etc). Preservation by smoking is the commonest way of fish preservation in the tropics. However, it is not environmental friendly because of its immense contribution to rapid deforestation, pollution and climate change and dirty nature of its product.
