Tasting Notes So much more than just a Volnay Villages. This wine from Domaine Fernand & Laurent Pillot comes from four tiny plots (Brouillards, Ronceret, Grand Champs and Petit Brouillards), some containing more than 50-year-old Pinot Noir vines. In fact, two of those plots are Premier Crus, adding great complexity into the mix. Clearly a man who knows how to multitask, when Laurent Pillot isnt making this wine with his son Adrien or taking care of his family, you might find him flying his microlight or his hawks, or maybe even conducting the local brass band. The hand harvested grapes arrive at the winery where they are destemmed and vatted in stainless steel and concrete. After a few days of cold maceration, the alcoholic fermentation starts with natural yeasts and there is daily "pigeage" or punching down.
