Tasting Notes Clase Azul Mezcal San Luis Potosí is made from green agave (Agave salmiana), a variety of agave native to the semi-desert slopes and plains of San Luis Potosí and takes roughly 12 years to fully mature. In its natural environment, the plant is considered mature at around 12 years of age, when it reaches a height of almost five feet. Its growth and rate of maturity depend on factors such as temperature, soil composition and the availability of water. Expect aromas of cooked agave, caramel, green chilies, sweet fruit and freshly cut grass with wildflower. On the palate, there are plenty of herbal notes up front, with notes of caramel, lime zest and cloves with a minerally and spicy finish. Each luxurious ceramic decanter is handmade by a community of Mexican artisans from the farmers of the organic agave to the enormous team of painters in the town of Santa María C
